3:00 PM: Arrival at the Estate
  • Welcome on the private estate in Tuscia, the ancient volcanic heartland between Lazio and southern Tuscany.
  • Paolo introduces the land: its Etruscan history, its olive groves, the character of the year's harvest.
  • Guided walk through the estate and olive mill.
The Masterclass: Olive Oil and Champagne
  • Six extra virgin olive oils tasted in sequence, each from a different harvest, soil, or method.
  • Six Champagnes paired and discussed with world-renowned Maestros.
  • Gourmet show-cooking session: live culinary performance featuring estate EVOOs paired with regional specialties.
The Convivium: Five-Course Candlelit Dinner
  • A refined five-course dinner where flavors, ideas, and Champagne pairings proceed together.

Meet the Expert

Paolo (Luigi Francesco) Borzatta
Born in post-war Italy, in the heart of ancient Etruscan lands near Bologna, Paolo Borzatta's journey has been shaped by intellectual breadth and cultural depth. Originally trained as a nuclear engineer at the Politecnico di Milano, he later specialised in particle physics, serving as an assistant professor at the University of Milan. He went on to become General Manager of the Plastic Pipe Division at Dalmine, the multinational acquired by Tenaris, before co-founding Cast Management Consultants, an international strategy firm for which he opened subsidiaries in Los Angeles and Shanghai, serving as its Managing Partner and Chairman. Today he is Senior Partner of The European House-Ambrosetti and Managing Director of Ambrosetti Group Limited, advising governments, cities, and corporations across multiple continents on corporate and international strategy. Since 1985 he has been deeply immersed in Chinese culture, having studied the language, lived in China, and cultivated a profound relationship with its philosophy and traditions. He practices Chinese calligraphy daily. He has authored two books: The Shanghai's Globe (2000, in Italian), published exclusively on his personal site, and Can I? (2015, in English), written on Twitter in 126 characters a day. Neither will ever be printed on paper, remaining intentionally ephemeral, like the finest experiences in life.

Beyond science and strategy, Paolo has dedicated himself to the philosophy of life's pleasures, a path that culminated in I&P Olii, his award-winning extra virgin olive oil enterprise, with a mission he states simply: transforming flavour into joie de vivre, and elevating taste into an art of living.

This evening exists because of a friendship. Paolo and Shazia Naqui, founder of Naquist, share a rare bond born from mutual recognition and a shared devotion to Beauty. Shazia, whose Indian-Persian-Italian heritage forms a natural bridge between worlds, and Paolo, renowned for both scientific contribution and humanistic vision, are united by aesthetics, philosophy, and the art of living beautifully. Together they conceived this evening as an invitation to beautiful minds: not to consume an experience, but to be changed by one.
